salt production is ibiza's only true industry, and certainly the only one that is not connected to tourism. ibizan salt is still highly prized, as it is very pure the process is very simple the salt pans are situated below sea level and at intervals the sluices are opened to allow water in and then the sluices are shut. for the next three months or so the sun does the hard work, evaporating the water to leave a crust of shimmering white salt on the pan's clay floor. the salt is then dug out of the pan and loaded on to ships for export....

it could be strongly argued that the village (pronounced 'portenatch') is the happy medium of tourism: enough development to support the local economy, but not so overpowering that the essential beauty of the place which is after all, one of the major reasons that tourists come is destroyed. though there are tourist hotels and apartments, there is still a fringe of pine and juniper to portinatx's beautiful half-moon cove, famed for its shallow waters, where many ships were able to ride out a storm. in former times, the barbary corsairs and other pirates also knew of the benefits of the cove, as the watchtower on the headland named for it (punta sa torre, on the western side of the bay) indicates....

san antonio, ibiza's second largest town, could hardly be more different from eivissa. but for all its brash modernity, it is a historically interesting town, one whose development mirrors the development of the island as a whole. to the north of the town, beyond cala salada, is the cova des vi (cave of des vi) where dynamic cave paintings were discovered in 1917. doubts still remain about the exact age of the paintings, some experts maintaining that they are bronze age in origin and therefore dating from about 2,000 bc....
