Spain is a rich and diverse country in terms of its history, culture and geography. This diversity is reflected in its cuisine, which varies enormously across the regions of Spain, with the exception of a few national staples such as the tortilla. Add to this an abundance of local fresh produce and a deep respect for meal times, and you can see why the Spaniards still regularly enjoy leisurely two-hour lunches and restauranteurs of all levels take great pride in their profession.
